Nightfall in Santorini. An owl in the moonlight. In the traditional canaves the vintners begin to press the grapes and they will continue through the night. As dawn turns to day the firts rays of sunlight fall on a golden high-alchohol wine that will be called Nychteri. Boutari Nychteri A.O.C Santorini is made of the versatile Asyrtiko grape, perhaps the more charismatic of all the Aegean grape varieties. It has a full warm flavor thanks to its high alchohol content, typical of traditional Aegean winemaking and the special character of well ripened grapes. Enjoy it chilled 8-10C with grilled fish or seafood.
